It is basically just a mix of water and myoglobin. Myoglobin is a protein found in animal muscles. Since, meat is made up of 75% water and 25% protein, these two things mix together to make the red colored liquid.
Once you freeze the meat, the muscles are ruptured by the frozen crystals of water. The mixture is completed and becomes what we all know and love to call "animal blood".
