Delish posted this how-to video last week and over the weekend I took a chance and tried it. It was delish-ous!
I did take a couple shortcuts, though. Instead of ricing my own cauliflower, I bought the already riced stuff that you can find in the freezer section at your local grocery store. Then I cooked it in the microwave according to the directions. THIS IS IMPORTANT: you must let the cooked cauliflower cool completely before adding the rest of the ingredients, especially the egg and cheese. If you don't wait the heat from the cauliflower will cook the eggs and melt the cheese; you will end up with scrambled cheese eggs (NO BUENO). Once you let the riced cauliflower cool, you can resume with the rest of the recipe!
